Pan-grilled Chickpeas and Peppers

Quick and easy, this recipe combines hearty chickpeas with sweet peppers. Try this as a side dish or main dish... it is vegetarian but full of protein and healthy fats!

Here's a quick and delicious chickpea recipe. I paired it with a current favorite of ours: shishito peppers. These peppers from Japan are delicious pan-grilled with just olive oil and salt. I added chickpeas and aromatics to the mix to make it heartier. You can use bell peppers instead if you like it sweet; shishito peppers can be "risky" for people who don't like spicy foods as one in 10 of them are hot. Enjoy!

Pan-Grilled Chickpeas and Peppers

Good as a side or main dish. Vegan. Serves 2.

Equipment

1 Medium-sized frying pan

Ingredients

150 g Chickpeas (cooked)

1 pack Shishito peppers or 1 medium Bell pepper (green)

1 Small white onion (thin slices)

5 cloves of garlic (whole) or more if desired

2 Tbsp Extra virgin olive oil

Salt and Pepper (to taste)

Procedure

  1. On medium heat, heat up the pan and pan-grill the chickpea and garlic (without any oil) for a few minutes, then add the peppers and onions. The goal is to get a mild sear on the ingredients. Stir or shake to avoid burning them.

  2. Once the desired sear is reached, put the EVOO into the pan and turn the heat to low. Stir and toss to coat all the vegetables and pulses in EVOO. Then, turn off the heat to avoid making the EVOO reach its smoke point. Shake the pan for a few minutes until the chickpeas have a good coating.

  3. Serve immediately.

pan-grill the chickpeas without any oil. be sure to stir it constantly to avoid burning them.

BEST SERVED WHILE STILL HOT.
